(Quick) Real Food Breakfasts

blueberry_banana_smoothieI love breakfast, it might be my favorite meal of the day. Eating a good breakfast sets me up for the day ahead. It’s amazing how much energy our brains use when we’re thinking deeply about issues, writing and trying to change the world!

Blueberry banana smoothie

I’ve been making this smoothie for years, and have yet to get sick of it. Combine one ripe banana, approximately one cup of frozen blueberries, almond (or rice) milk so it covers the solids and one heaping tablespoon of almond butter. Use an immersion blender to blend and within 30 seconds you have a delicious smoothie. Click here for a homemade almond milk recipe. 

You can get a Cuisine Art immersion blender for around $30.00 and in my opinion they are far superior to pulling out a clunky blender. The best part? It takes less than a minute to clean.

Greek yogurt, wheat germ and honey

yogurtThis is newer to my breakfast menu. I have been combining greek yogurt (plain – to avoid a massive sugar bomb), walnuts, honey, and wheat germ – it’s delicious! You can add some frozen berries in the yogurt and it will keep on your trip to work, or a picnic with your kids. The frozen berries will keep the yogurt cool and will eventually de-thaw for yummy eating. Bananas are another favorite topping.

I like this light breakfast option on mornings that I workout.

Eggs and toast

We’ve learned an important lesson from the 1990s, not all fat is bad. When I eat eggs and avocados regularly, my weight is easier to maintain. I like to make two eggs over easy on a piece of sourdough toast, which takes about five minutes all said and done. Sometimes if I’m extra hungry I’ll add avocado to the toast and put the egg on top and sprinkle with real salt. Be sure to get safe cookware (aka stainless steel) to avoid PFCs. PRO TIP: if you have stainless steel cookware, once you’re done frying your eggs, add hot water to the pan and let it sit. By the time you’re done eating, the residual eggs will easily slide off the pan. No scrubbing necessary.

Peanut butter hot cereal

Okay, anything with peanut butter is good, duh. Bobs Red Mill has a great seven grain cereal (they have a wheat-free version as well). You simply add water, microwave and have the foundation for a solid breakfast. (This one is especially tasty in the winter.)

I like to add almond/rice milk, honey, wheat germ, a scoop of peanut butter and nuts. A little goes a long way with this, before you know it you’ll be full and ready for the day.
