I wanted to share with you a simple and incredibly healthy kale cabbage caesar salad to add to your weekly menu. It takes 10-15 minutes to prepare and can work great as a main or side dish.
What you’ll need:
- 1/3 head of green cabbage
- 1 bundle of kale of your choice
- 1 lemon
- 2 heads of garlic
- Freshly grated parmesan cheese
- 1 can of anchovies (optional)
- Croutons (optional)
- Olive oil
How to prepare your kale-cabbage salad
1- Use a vegetable mandolin to slice 1/3 of a head of green cabbage
2- De-stem and chop a kale
3- In a small bowl or jar mix together two heads of freshly pressed garlic (or finely chopped if you don’t have a garlic press), 1 lemon freshly squeezed, and a ¼ cup of freshly grated parmesan cheese and 1/4 cup of olive oil. Adjust olive oil and lemon juice to taste.
4- If you like anchovies, add half a can of anchovies and blend the dressing with a hand/immersion blender.
5- Add the cabbage and kale in a large mixing bowl, and toss in dressing to taste. Add croutons for a little crunch.

I must admit I would leave out the anchovies :) But the rest sounds delicious!
Lots of great ingredients in there! I can do anchovies when they are pureed into a dressing.
Me too, I can’t always handle anchovies whole.
This dressing sounds insanely good! Adding the anchovies is the real winner for me and I guess that’s ingredient that makes it truly “Caesar”. Can’t wait to try and assuming it would work well on other greens… spinach and chard for example.
This is so timely- I have 2 giant heads of cabbage from my CSA sitting in my fridge. I’ll give the cheese and anchovies a miss, but the rest sounds delish!
