Dinner is often the hardest meal for me to find the time, energy and motivation to prepare. It is also the meal where it’s easiest to fall down on my healthy eating routine (cheese and crackers or a bowl of popcorn for dinner? Been there, done that).
Cooking in bulk on the weekends has been one of my best go-to ways to ensure I have healthy, delicious food for the week but it doesn’t always happen. I thought I’d share some of my fast and simple dinner solutions for nights you’re low energy or on-the-run.
Shredded slaw with a turkey/veggie burger
- Shred green or red cabbage with a mandolin slicer on your plate. Drizzle with olive oil and brown rice vinegar.
- Broil a turkey burger or veggie burger.
- Mix mayonnaise and curry powder for a nice aioli.
- In a bowl place cooked grains (if you’ve made them already like rice, lentils, etc), shredded cabbage and place the burger on top.
- Add a dollop of the curry mayo and enjoy!
Avocado toast
- Toast whole grain or sprouted bread
- Slice a ripe avocado
- Spread mayo on toast (optional)
- Season with sea salt, curry powder and cayenne pepper
- Eat the fastest meal in the world!
Vegetable bowls
- Your choice of grain (brown rice, wild rice, millet, fonio)
- Sauteed greens, broccoli, or shaved cabbage
- Canned beans (simply warm them up on the stove)
- Freshly sliced avocado
- Drizzle Bragg’s Liquid Aminos or your sauce of choice.

Good tips! The slaw is clever and filling. I can’t bring myself to use canned beans unless I absolutely couldn’t find the time to cook dry beans. It would be helpful to know that all of those containers are safe to use.
I hear you re the canned beans. I haven’t found the time to cook dry beans and am guilty of eating them on nights where I don’t have much time!
I love me some avocado toast! I often put some beans in there too, mash it all around. So filling and yummy.
The veggie bowl sounds like a great alternative for me and nice for lunches too (I’m a bit tired of my usual suspects). I’m not an avocado fan but my hubby and kids are so I’ll be sharing that one, too!

I have had liquid aminos in my cabinet for two months and have only used it for the recipe I purchased it for. I think I need to use it for more!!
I do avocado toast for lunch a lot. And I LOVE bowls with rice, beans, veggies etc…with Sriracha on top!

Here is my super-easy quick go to meal: Turkey burger(s) in a skillet style pan, (I love cast iron, no oil needed) cook 1/2 way, flip over and add veggies (fresh or frozen, in any combo) on top. Cover and cook until done. The veggies get nice flavor from the turkey burger and you can add whatever other spices you like. So easy.
I don’t eat many grains because I don’t digest them very well, but the rest of my family often adds a bun or rice or tortilla to this.
Every one of these sounds great. I make veggie burgers a lot. They’re so simple to throw on the grill when everyone else is having beef or turkey. I use Bragg’s all the time on everything.
